How to make Carrot cake friands

These delectable Carrot Cake Friands are packed full of carrots, mixed spices, walnuts and more. Topped with a cream cheese frosting they are the perfect antidote to these cold evenings

Ingredients (makes 12 Friands)

• 300g Organic Self Raising Flour

• 3 Organic eggs

• 210g Organic Dark Brown Sugar

• 185ml organic sunflower oil

• zest of 1 organic orange

• 2.5 tsp Cinnamon

2.5 tsp mixed spice

300g grated organic carrots

100g organic chopped walnuts

• Cream cheese frosting : 100g Butter, 150g full fat organic cream cheese, 500g Icing Sugar

Method

Preheat the oven to fan 140C/conventional 160C/ gas 3.

Grease a 12-hole friand tin.

Whisk together the eggs, dark brown sugar and oil.

Sift in the self raising flour, mixed spice and Cinnamon. Mix thoroughly.

Now add in the orange zest, walnuts and carrots and again mix thoroughly.

Pour into the friand tins, and bake in the oven at 160c fan for 10-15 minutes until the sponge is light and springy to the touch.

Once cooked take out of the tins and leave to cool on a wire rack.

For the Cream cheese frosting cream together the butter, cream cheese and icing sugar.

Once the friands are cooled you can pipe the frosting onto the friands and add chopped walnuts for decoration. Heaven!
