Ceviche lunch box: salmon tartare with spicy mayonnaise on potato cakes

Last week, Laoise talked about the joy of working with an inspiring chef, and in particular Dean Parker, now at The Manor. This week, she fancies a bit of escapism:

Now you don’t need me to tell you that it’s freezing cold in London. Our rooftop garden in The Dairy glistens with frost every morning and often when doing the daily herb run for service I feel I’d like to be wearing gloves - but then I warm up pretty quickly running around.

So for this week’s lunch box we’re taking a trip to Soho to escape the cold and loose ourselves in the Peruvian kitchen of Ceviche. Martin Morales’ menu makes ceviche a serious business. Which it is. An afternoon spent there dining on ceviche accompanied by Pisco Sours is a definite cure for the current temperatures.

For our lunch box we’re inspired by his salmon tartare dish, with a spicy red pepper mayonnaise to warm you up. If that doesn’t work you could always try the two-layer sweater-and-socks approach I’ve been adopting lately.

Cost to make per portion: £3.10

Preparation and cooking time: 10 minutes

What you will need:

75g raw salmon

Juice of half a lemon

1 spring onion

½ an avocado

1 tbsp. mayonnaise

1 tsp. spicy red pepper paste

2 potato cakes

Sea salt, black pepper

Equipment:

Knife

Bowl

Spoon

How to make it:

Finely dice the salmon and place in a bowl with the lemon juice and season with sea salt and black pepper. Leave to marinade in the fridge.

Finely slice the spring onion and avocado.

Mix the mayonnaise with the red pepper paste and season with sea salt and black pepper to taste.

Assemble the salmon tartare, spring onions and avocado on the potato cakes topped with the spicy red pepper mayonnaise.
