My favourite restaurant with... Jeremy Lee, head chef at Quo Vadis

Jeremy Lee is the head chef at Soho's Quo Vadis restaurant. Prior to that, he spent 16 years working as head chef at D&D London’s The Blueprint Café at The Design Museum. Here he tells us where he likes to eat out in London.

Where would you pay to eat out: “My favourite new place is Sushi Tetsu (Jerusalem Passage, EC1V; sushitetsu.co.uk) which is amazing. And St John (stjohngroup.uk.com) always continues to please. I love any of them. And Café Anglais (8 Porchester Gardens, W2; lecafeanglais). I had a brilliant dinner there the other night.”

Why? "Sushi Tetsu’s been a real revelation and a delight. It doesn’t have a hamburger or a steak on the menu which is complete heaven and it's tiny and the antithesis of everything. It’s peaceful. It’s just a little oasis in very, very turbulent waters. It’s very luxurious."

What do you eat there? “At Sushi Tetsu, the best sushi. The eel is astonishing and he always runs out - which is annoying. The fish is spectacular – delicious sea bass, the scallops are absolutely out of this world. It’s very considered cooking. There’s very little new. And he’s got the most amazing pickled ginger. Nothing comes out of a tin. It’s all hand-made and it’s just exquisitely prepared. They are a very wonderful tradition.”

Who would you take? “I went with chums to Sushi Tetsu which was lovely, and also with Eddie and Sam Hart. But you could go with anyone really. And they could not be more welcoming and more charming."
