Roasted Masala Cauliflower by Indian cook Mallika Basu

A rainy day treat best paired with masala chai, says Mallika Basu

Crispy fried treats are a rainy weather essential coupled with masala chai, but this roasted cauliflower takes a healthier route to deliver equal amounts of happiness.

Tossed in gram flour and spices, they are great as a savoury snack or teamed with a creamy Khichdi for full meal impact. Rice flour adds extra crunch to the cauliflower, but you can leave this out if you don’t have it.

Ingredients (Feeds 2)

1 medium cauliflower

2 tbsp oil

1 tbsp gram flour

1 tbsp rice flour

Half tsp turmeric

Half tsp chilli powder

Half tsp carom seeds

Generous sprinkle of salt

Method

Preheat the oven to 200 degrees C. Cut the cauliflower into bite-sized pieces and wash well in a sieve. In a large mixing bowl, tip in the rest of the ingredients bar the salt. Toss in the cauliflower and mix well with your hands.

Now, line a baking sheet with parchment and place the cauliflower on it in a single layer. Roast for 30 minutes

Cauliflower fritters or Kophi Bhaja. Except these aren't fried. Just wash, coat in a tablespoon of oil and gram flour, add salt, sprinkle of turmeric and chilli powder and carom seeds. Bake for 30 minutes in a hot oven until golden. Enjoy like popcorn!
