Bone Tea: London’s first bone broth bar launches

Forget cold-pressed juices and coconut water, there’s a new health drink in town – bone broth.

Effectively just a stock made from slowly-cooked roasted bones, it was the tipple of choice for models at New York fashion week earlier this year, and last winter Hearth restaurant (restauranthearth.com) brought the Big Apple its first bone broth bar serving the liquid to health-conscious types in takeaway coffee cups.

Now it’s London’s turn. Bone Tea launched in Notting Hill today (June 15), becoming the capital’s first dedicated bone broth outlet. It occupies a spot within Bumpkin restaurant (bumpkinuk.com) on Ledbury Road and is describing itself as a lab, testing and sampling new products and seeking customer feedback as it gears up to launch the Bone Tea brand more widely.

This week is a trial period with only limited range and stock as the team find their feet, with Bone Tea to launch fully on Monday (June 22).

The popularity of bone broth largely comes from its high levels of protein, vitamins, minerals, collagen and keratin. Being carbohydrate-free, it’s also a winner for those on paleo diets.

It’s founded by chefs Bjorn Van Der Horst and Omar Romero Quezada. Van Der Horst said: “We were discussing the amazing worldwide growth of the branded coffee shops and giggling at the idea that perhaps it was not the coffee or tea that today’s consumer was addicted to but the ‘on the go cup’ itself. We thought about offering a healthier and more sustainable alternative to coffee or tea that could also be had on the go...and voila Bone Tea was born.”

Bone Tea might be London’s first dedicated broth bar but it’s far from the first to sing its praises. Clean eating duo Jasmine and Melissa Hemsley – known as Hemsley + Hemsley (hemsleyandhemsley.com) – loudly hail its health benefits, you can buy it at Bone Daddies (bonedaddiesramen.com), and it has featured on the menus of restaurants including The Clove Club (thecloveclub.com) in Shoreditch and Heston Blumenthal’s Dinner (dinnerbyheston.com) in Knightsbridge.

Perhaps we'll soon be seeing commuters clutching cups on bone broth rather than their usual morning caffeine fix...
