With everything from fried onion ring fillings to Peruvian takes on the bacon butty, and Creole-spiced slaw, London’s sandwiches are spearheading a food revolution.

Late-night bread joints are the new burger shops — there are queues at Max’s in Crouch End for end of the night sustenance. He serves beer too. Evangelists say that sandwiches are lighter than burgers, and more nourishing than fry-ups the morning after.

Sure, sales of sliced bread are down, but this doesn’t mean we don’t want sandwiches. It’s just that we are busy and want other people to make them for us, often on homemade bread that is far superior to sliced white. London has everything from Swedish rye to south London sourdough.

Whatever your preferences, London has hundreds of sandwich makers at hand.

A sandwich is proudly not clean eating — come armed with napkins. The next few days have been declared National Sandwich Week — here’s what to eat to celebrate.
