The restaurateur behind London’s most expensive steak is leading the pack aiming to make Victoria a culinary hot spot — with a wine-led venture serving raw kangaroo.

Former Gaucho boss Martin Williams opened M in the City last year, dishing up prized kobe beef cuts for £149.

He launches his second branch on Victoria Street in November, ahead of openings from chefs including Jason Atherton and Bone Daddies’ Ross Shonhan at the nearby Nova complex next year. He said: “You could list on one hand the places you would go for a great dinner in Victoria, yet 100,000 people live and work there. We’ll be the first of the new breed of restaurants in Victoria.”

Mr Williams, 39, says the SW1 M will be “more female friendly” than the City original with an expanded lunch menu and wine shop and tasting stations.

He added: “Around Victoria you’ve got the head offices of Jimmy Choo, Burberry, Tom Ford. It’s got very feminine companies, it’s not just the masculinity of the City.”

The premises in the Zig Zag building will house a 120-seat grill room, a private members’ room and the Raw restaurant bar, which will serve wild red kangaroo tartare. Mr Williams said: “It’s only two per cent fat, so there is no fat or sinew in it, so it’s perfect for a tartare. It’s so lean and rich. People are quite worried about kangaroo, then they try it and think it’s amazing.”
