Noma 3.0: Rene Redzepi to reopen world's most famous restaurant after residency in Japan

The celebrated restaurant will embark on a second tour of Japan in the autumn

The world’s most famous restaurant, Noma, will relocate to Japan this year for a 10-week residency.

Founder Rene Redzepi and his entire staff will return to Ace Hotel Kyoto between October 8 and December 18, serving a tasting menu and drinks pairing for €840 plus service charge (around £720). 

Redzepi undertook the same project last year, when he and the entire Noma team, along with their children and significant others, relocated to Kyoto for a “season”.

“It was one of the most fulfilling and creativity electric periods in our team’s history,” said press material sent to the Standard today.

The second Japanese residency comes after founder Rene Redzepi last year announced the closure of his three Michelin-star venture at the end of 2024, explaining that Noma would return “as a giant lab” in order to “share the fruits of our efforts more widely than ever before”.

It appears that timeframe has been extended, as new information from the restaurant today said: “When we return to Copenhagen in the spring of 2025, we will open for Ocean Season, the last of the three-season yearly format we have followed since 2018. We’re beginning a new chapter for our restaurant — a time for us to take even bolder creative leaps, share even more widely, and follow our curiosity wherever it may lead us.” 

Redzepi also released a statement about Noma in Japan, as well as the group returning to Denmark next year: “In the height of sakura season, the creativity flowed effortlessly, sparking some of our best work yet. It was a time of vibrant energy and inspiration, a dream of a trip, a highlight of the past decade for our team…

“Following our second stay in Kyoto, we’ll head back to Copenhagen, where another Ocean Season awaits in early 2025. Then it’s time to enter a bold new chapter for our restaurant.”

Noma first opened in 2003 and has been named the Best Restaurant in the World by Restaurant magazine four times. In 2021, it scooped top spot in the World's 50 Best Restaurants Awards.

Reservations for Noma’s residency in Kyoto will be released on May 14. noma.dk
