A new London pop-up will launch in March, with a one-night takeover at The Canvas Café in Spitalfields.

Potlatch is the work of Nick Gilkinson, who quit his job in finance two years ago to pursue his dream of running a restaurant. He’s spent those two years working with restaurant group giant D&D London, including on the launch of The German Gymnasium in King’s Cross.

For Potlatch he has teamed up with Canadian chef Jonathan Williams, who previously worked at modern Michelin-starred Shoreditch restaurant The Clove Club.

It is planned for this to be the first in a series of monthly events.

Williams has devised a four-course menu designed to show off the best of British.

It will kick off with snacks such as pork crackling with anchovies and sunflower seeds, and goes on to include: salt-baked celeriac with Brockley-made curds, apple, hazelnut and brown butter; roasted Cornish monkfish with cauliflower, buttermilk, pine and roe; smoked wood pigeon with a confit leg, squash, salsify and greens; and finally a salted caramel custard with quince and shortbread.

Speaking of his techniques, chef Williams said: “Cooking is not hard when you have great ingredients, and they aren’t hard to find in the UK. My job is to treat them with respect by using good techniques and let the quality speak for itself.”

Commenting on the experience generally, Gilkinson adds: “Whether it's a sip of an amazing wine, taking a bite out of a perfectly cooked dish or even the music playlist creating just the right atmosphere — I want to try and create those moments for guests that make them smile the way an amazing meal has always created such great memories for me.”

For the £60 ticket price tag, diners will be treated to a welcome cocktail as well as unlimited wine to wash the courses down.

It will be sourced from “smaller, more traditional winemakers and feature different grape varieties,” says Gilkinson. And yes, it comes in unlimited quantities.
