Restaurant on world’s biggest holiday ship tries out menu in capital

A fine-dining experience to be offered on the biggest cruise ship in the world is being tried out in London tonight, March 8.

Ahead of the May launch of Royal Caribbean’s Harmony of the Seas, the chefs behind its restaurant Wonderland are hosting an evening in Covent Garden dubbed the “Dry Run”.

Guests will be served an eight-course menu including crispy crab cones, Berkshire pork belly, halibut cooked in clear paper, and buffalo chicken eggs — a revisiting of the Eighties dinner party classic devilled eggs.

Michael Gilligan, director of culinary operations at Royal Caribbean Cruises, said: “The Dry Run will be as close to the real thing as possible. The waiting staff will be in their uniform, which is purple and very Liberace. The tables, the cutlery, will be there.

“The food is new and exciting, but I didn’t want the menu to all be Harry Potter food or molecular gastronomy for the sake of it. There is a real element of theatre — but it’s not too avant garde.”

At 218ft wide, 1,187ft long — the length of four football pitches — and weighing 227,000 tonnes, Harmony of the Seas will hold 6,410 guests and 2,300 crew. The ship has 31 bars and will stage the musical Grease.
