The Water House Project: Chef Gabriel Waterhouse finds permanent Hackney home for underground hit

One of east London’s most buzzed-about dinner spots, The Water House Project, will move into a permanent home this September.

The “social fine dining” concept, which began a 12-seat affair inside chef Gabriel Waterhouse’s Bethnal Green flat back in 2015, has grown to become something of an underground hit within the capital’s food scene.

Early last year, it moved to Hackney’s Mare Street and later adapted itself into a communal but socially distanced temporary restaurant during the pandemic.

Now, it has found its new home on Corbridge Crescent, a stone’s throw from Mare Street and just beside Regent’s Canal, with Bethnal Green tube station a 10-minute walk away.

The 40-cover space will feature a “borderless” kitchen as its centrepiece, with diners able to watch on as Waterhouse and his team prepare the food.

The nine-course tasting menu, which is set to change each month, will take cues from Nordic cuisine, with a focus on seasonal vegetables. The September offering will range from British lops pork belly donut with plum chutney, to St Austell mussels and Jerusalem artichoke with chive and lemon, Herdwick lamb, black garlic, polenta and mint follow, and fig leaf ice-cream with fig leaf oil.

“I’m incredibly excited,” said Waterhouse, who honed his craft at Galvin La Chapelle, and will work alongside sous chef Thomas Lemercier, formerly of Hide, at his new space. “It’s a big step taking us to a new permanent home after years of refining our experience.

The restaurant will feature two communal tables alongside eight smaller tables. “The experience will still be communal in the sense that dishes will be served and introduced at the same time by myself and the team,” added Waterhouse

Dinner is priced at £99 per person, including food and wine pairings, and bookings will be taken from Wednesday to Saturday.
