Muse: Tom Aikens makes restaurant return with every dish 'inspired by life'

Britain’s youngest ever two Michelin star chef is making his long-awaited fine dining return with a restaurant big enough for just five tables.

Tom Aikens’ new flagship Muse, in Belgravia, is expected to open in December — more than five years after the closure of Chelsea destination Tom Aikens Restaurant in 2014.

The 49-year-old said he had looked at more than 100 potential sites in central London before taking out a lease on a bijou mews house near Belgrave Square.

The restaurant will have enough space for 26 diners, including 12 sitting at ground and first floor kitchen counters, as well as two tables of four and three for two in the first floor dining room.

They will be offered a choice of two tasting menus, one likely to be priced at between £120 and £130 and the other at “just below” £100. There will also be wine matching options. Each dish will be inspired or influenced by people, experiences and events in his life making up what is described as a “gastronomic autobiography.”

He said: “It will be the cumulation of all the journeys I’ve had and all lessons in life that have led me to this resting place. I knew that the next place I found had to be absolutely perfect.

“It will be such a cosy, intimate warm friendly environment that people will almost feel that they have come into my home ... The idea at Muse is it’s not just a place to eat but from the moment you enter you’re on a journey.” He said influences will include “my mother, Tania, who opened my eyes to the infinite pleasures and absolute delights that food can bring” and memories of the “first time I tasted a warm, juicy strawberry or a crisp, sweet pea-pod plucked straight from the ground.”

Aikens was awarded his record-breaking second star when he was the 26-year-old head chef at Pied a Terre in Fitzrovia.

Muse will open for dinner from Tuesday to Saturday and for lunch on Wednesday, Thursday and Friday.
