Tom Kitchin cooks up a storm at Aster in Victoria

Tom Kitchin talks Scottish game, working for Pierre Koffmann and how it all began as he cooks in the capital

This autumn, Helena Puolakka was joined by Michelin-starred Scottish chef Tom Kitchin at her restaurant Aster for one-off dinner which also served as something of a reunion.

The executive head chef of the Nordic and French-inspired restaurant in Victoria previously worked with Kitchin under legendary chef Pierre Koffman at three-Michelin starred La Tante Claire.

Koffmann was also in attendance as the Finnish and Scottish chefs joined forces to create a special meal for guests, while being interviewed by restaurant critic Richard Vines.

The menu set about celebrating the virtues of Scottish game, which Kitchin explores in his new book Meat & Game.
