Top chefs join forces for a meal devoted to Ibérico pork at Brindisa

A collection of London’s top chefs will come together next month to celebrate Spain’s inimitable Ibérico pork at a one-off dinner.

Rowley Leigh, former Polpetto chef Florence Knight, Hawksmoor’s Richard Turner and Margot Henderson from Rochelle Canteen will join Brindisa’s head chef Josep Carbonell for the meal, which will be held at Brindisa Rupert Street.

The dinner marks the fact that the Spanish group’s newest London restaurant has relaunched in a (slightly) different guise after originally opening as Morada Brindisa two years ago, and celebrates the fact that Brindisa has been at the forefront of London’s Spanish food scene for almost 30 years now.

​Brindisa’s founder, Monika Linton, has assembled the team of chefs to showcase the versatility of Iberico pork, which is often referred to as the carnivore’s ultimate meat.

She said: “We wanted to take Brindisa Rupert Street back to our origins; championing Spanish produce and showcasing the depth of Spain’s food culture. Spanish cooking is so much more than just the tapas dishes everyone is familiar with –this is an invitation to discover the wealth of choices and cuts the unique Ibérico pig provides.”

Each chef will use an specially-created dish to showcase a different cut of fresh Ibérico de Bellota pork from Señorio de Montanera in the Dehesa region of southwest Spain.

Tickets for the dinner, which takes place on September 19, will be available from August 19 onwards here and cost £35.
