Vardo: Caravan team to launch new restaurant concept in Duke of York Square pavilion

The team behind popular all-day dining spots Caravan will launch a new restaurant concept in Chelsea this autumn.

Vardo will open inside a cylindrical, three-storey stone and glass pavilion that was recently built on Duke of York Square.

Touching on the team’s success with the Caravan group, the new concept is named for the vardo wagons used by Romani travellers during the 19th century. The menu's theme is “no boundaries”, inspired by the notion of a wagon travelling the world collecting produce and flavours as it goes.

Vardo will also focus on “low and slow” cooking, and giving a globally influenced twist to produce sourced from the UK. Dishes expected on the menu include slow braised carrots with brined mustard greens and aji blanco; charred aubergine with saffron buttermilk dressing and grilled Turkish chilli; green baked eggs with lentil, pine nut and kale ragu and a dish of Baharat-rubbed lamb cutlets served with green harissa and tahini.

Caravan co-founder Laura Harper-Hinton revealed on Instagram in April that the team would be opening up a new concept at the site, telling followers to expect a “new name, new menu, new design, new part of town”.

"Vardo is an evolution from what we do at Caravan," Harper-Hinton told the Standard. "It is the next step in our journey to celebrate and champion the ingredients, cuisines and cooking techniques from around the globe."

"We want to introduce diners to a truly global, adventurous, creative and innovative food and drinks menu, set against the backdrop of stunning building."

The striking building has been designed by Nex architects. It features fully retractable glass walls, and is flanked by the Saatchi Gallery on one side and King’s Road on the other.

This will be the first west London venture for the Caravan group, which boasts locations in King’s Cross, Exmouth Market, Bankside, Fitzrovia and the City, as well as its own coffee roastery.
