How to make the ultimate vegan chocolate mousse

Veganuary doesn’t have to mean no treats — try a banana chocolate mousse from Henry Firth and Ian Theasby, the guys behind Bosh!

You’ll already have heard of Bosh! the vegan cooking brand run by Henry Firth and Ian Theasby.

With more than 600,000 Instagram followers and counting, they’ve got two best-selling vegan cookery books to their names, as well as a new series on ITV. Their speciality? Healthy, plant-based recipes that are easy to make and even easier to eat. ‘Bananas are a really great vegan hack,’ says Firth. ‘And who doesn’t like chocolate mousse? Bananas and chocolate go so well together.’

Theasby agrees that while a chocolate mousse may look like it’s breaking all the rules of your January diet, this one is deceptively good for you and a breeze to whip up. ‘It’s extremely simple,’ he says, ‘and you’ve not got much sugar in there. It’s just the natural sweetness of the bananas, the blueberries and a touch of maple syrup.’ It’s a recipe that’s ideal for entertaining in January, when cold nights still call for a dash of decadence. ‘It tastes expensive, and if you serve it in Martini glasses, it looks really cool for a dinner party,’ says Firth. Banana chocolate mousse - serves 4

Ingredients

3 ripe bananas (300g peeled weight)

150ml oat cream

¼ tsp ground cinnamon

75ml maple syrup

150g cocoa powder

50g fresh blueberries

Handful of mint leaves

Peel and roughly chop the bananas. Put the bananas, oat cream, cinnamon and maple syrup in a blender and blitz until smooth. Add the cocoa powder and blitz again. Transfer the mousse to serving glasses and chill in the fridge for at least 30 minutes until thickened. Remove, top with blueberries and mint leaves, and serve.
